Recently, there has been a decline in demand for plant-based meat. In response, start-up companies, such as Choppy, Hoxton Farms, and Mission Barns, are experimenting with putting real animal fat into plant-based meat. Though appalling to vegetarians and vegans, the goal of these companies is to appeal to the larger, meat-consuming audience, a transition needed for a sustainable future. (Keira Sarmiento)
